Sweet potatoes are high in fiber, good carb and Vitamin A source. This recipe would give the staple a new life as it would certainly make it a much more delicious meal for consumption.
By including chorizo and eggs, you are ramping up on the flavour of the dish as well as the protein count. This combination would really pack a punch when it comes to the nutrition count. Chorizo is rich in vitamins and minerals that helps with muscle building and fat loss. It is also a rich source of vitamin B12 (necessary for both fatty acid and amino acid metabolism), selenium (helps produce thyroid hormones), and thiamine (essential for carbohydrate metabolism).
Ingredients
500g sweet potatoes
1 tbsp. oil (canola or olive)
1/2 onion (finely chopped) (optional)
150g chorizo (diced)
1/2 tsp. salt
1/2 tsp. black pepper
4 eggs
Steps
1. Work the potatoes
Peel the sweet potatoes and dice it. Place the cubes in a pan, cover it with water. Let it boil. Once its boiling, drain and let it cool off for 2-3 minutes.
2. Next, the chorizos
While waiting, add the oil to a pan on medium to high heat. Once melted, add the onions and chorizos. Fry for 3-4 minutes (Stir occasionally)
3. Crispy and simmer
Turn the heat down to medium and add in the sweet potatoes, sea salt and black pepper. Squash them down a little and fry for 8-10 minutes without moving them until the bottom becomes crispy.
4. Add the eggs
Once crispy, make 4 small wells in the hash and break in the eggs. Cover the pan with a lid and cook for 2-3 minutes until the eggs are cooked
5. Garnish and serve
